Introduction

This is a recipe that I found in The African-American Heritage Cookbook. I was so good and low in calories per serving that I thought I would share it. Number of Servings: 8

Ingredients

    5 medium russet baking potatoes
    1 cup heavy cream
    2 tablespoon butter
    1 teaspoon salt, or to taste

Directions

Bring a large pot of water to a boil. Wash potatoes and place in boiling water. When a second boil is reached, cook 30-45 minutes or until fork-tender. Drain water from pot, cover, and allow potatoes to steam an additional 30 seconds, until dry. Remove skins. Add cream butter, and salt. Using an electric mixer, whip potatoes until smooth. They won't however, be lump-free. Add additional butter, cream and salt as desired.

6-8 servings (although the nutritional value is based on 8 servings)
