Ingredients

2-1/2 cups prepared wild rice
3/4 cup chopped white onion (1/2 large onion)
1 tbsp olive oil
1 (14oz) can diced tomatoes (no salt added)
1 (14oz) can tomato sauce
1 (14oz) can corn, drained (no salt added)
1 (14oz) can black beans, drained
1 (small) can green chiles
dash - kosher salt
1-1/2 tsp ground black pepper
1 tsp cumin
1/2 tsp cayenne pepper (or to taste)
*vegetable broth as needed*
Directions
Prepare wild rice according to package instructions.
In a small saucepan, over medium heat, combine onion with olive oil and salt, heat until tender(3-5 minutes).
Add diced tomatoes and sauce, bring to simmer.
Add additional canned ingredients (corn, beans, chiles) and spices (pepper, cumin, cayenne) bring to simmer again.
Add prepared rice, combine thoroughly, if consistency is too thick, thin with vegetable broth.
Excellent with cornbread on the side for dipping.
