Introduction

A super easy and healthy summer salad that can also be used as a salsa. A super easy and healthy summer salad that can also be used as a salsa.
Number of Servings: 6

Ingredients

    2 15 oz. cans black beans, drained and rinsed
    1 15 oz. can diced tomatoes with green chilies
    1 16oz. bag frozen extra sweet corn, thawed
    1 4 oz. can diced green chilies
    1/2 c. diced red onion
    1 c. chopped fresh cilantro
    1/4 cup lime juice
    salt and pepper to taste

Directions

Combine all ingredients in a large resealable container and mix well. Serve immediately or refrigerate overnight for the best flavor. Makes approximately six 8 ounce servings.
