Ingredients

    1 block firm tofu
    1/2 cup mushrooms, pieces or slices
    1/2 cup green pepper, cut into strips
    1/2 cup red pepper, cut into strips
    1/4 cup onions, chopped
    1 clove garlic, minced
    2 tbsp olive oil
    2 tbsp lite soy sauce
    1/2 cup dry couscous
    1 cup water

Directions

Cut tofu into 1 inch cubes and pat dry with paper towel.
Saute all the veggies & the tofu in olive oil for 5 minutes until mushrooms & tofu start to brown.
Add 1 cup of water, cover & bring to a boil.
Add couscous & soy sauce, remove from the heat, stir & cover until all liquid is absorbed.
Enjoy!
I like to use flavored tofu such as onion & garlic, or chinese spiced for more variety.

    My 23 YO son, who only recently started trying different veggies, ate it all! We all really liked this dish, and I would make it again...I might throw in a little something hot...jalapenos?? cayenne?? hot sauce?? - 1/2/08
