Number of Servings: 6

Ingredients

    1 cup uncooked rice (3 cups cooked)
    1 15 oz can black beans, drained
    1 large or 2 medium cloves of garlic
    1/2 yellow onion
    1 1/2 tsp minced jalapeno peppers
    1/3 bell pepper
    1 1/2 tsp ground cumin
    1/8 tsp ground pepper
    1/4 tsp sea salt (or table salt)
    1/4 cup red wine or cooking sherry
    3 tbsp olive oil

Directions

1) Cook brown rice according to instructions (takes approximately 45 minutes)

2) Meanwhile, sautee onions and garlic with the olive oil in a frying pan for 5 minutes (or until onions are translucent)

3) Add remaining ingredients and let simmer for 4 to 5 minutes

4) Remove from heat and mix with brown rice

Makes 6 servings

    This turned out great. I used the comments from jojotrix because I thought the tomato sauce was just the little extra it needed. I used both black beans and red beans. I took it to a cuban dinner and it was a big hit. Thanks! - 11/14/10

    Incredible!
    I added 1/2 cup of tomato sauce, 1 tbsp. lemon juice, 2tsp. paprika and used red wine vinegar in place a wine. Delicious will definately make this again. Can also use red and white beans. - 2/1/10
