Ingredients

    2 Tbsp low-sugar peanut butter (e.g., Simply Jif)
    2 Tbsp granulated splenda
    2 teaspoons egg substitute
    2 drops vanilla extract
    ---
    Optional ingredients (choc chips and coconut both included in nutrition calculation):

    1 Tbsp mini choc chips
    1 Tbsp shredded coconut
    Raisins
    Chopped peanuts, cashews, or hazlenuts
    mini M&Ms

Directions

Preheat oven to 350.

Mix all ingredients in small bowl with a fork.

Drop onto non-stick cookie sheet or sheet lined with parchment paper.

Bake for 10 - 12 minutes. Allow to cool slightly on sheet then remove to wire rack to finish cooling.

Makes 2 servings.
