Introduction

Ingredients

    1 lb chicken breast, bone and skin removed
    2 Tbsp Hoisin
    2 Tbsp Thai Chili paste
    1 Tbsp vegetable or canola oil
    1 Tbsp Mirin
    2 Tbsp rice vinegar
    4 tsp Sriracha
    1 C brown rice
    2 C water

Directions

1. In a saucepan, add 1 C rice and 2 C water. Bring to boil. Once boiling, reduce heat, and simmer about 45 minutes, till all water is absorbed.
2. In a large bowl, whisk together hoisin, chili paste, oil, mirin, vineagr, and sriracha. For additional heat, use more sriracha or chili paste. To make milder, use more vinegar.
3. Cut chicken into bite-sized pieces. Add to sauce, and mix to coat.
4. Pour mixture into a non-stick skillet, and cook through.
5. While chicken is cooking, microwave broccoli according to directions. Once chicken is cooked through, add broccoli. Stir to coat broccoli in remaining sauce.
6. Serve over rice.
