Introduction

From the Fix It & Forget It book. Makes a really big batch, just barely fits into my crock pot. Serve with grated cheese if you like. Ingredients

    6 cups vegetable broth
    2 carrots, chopped
    2 large onions, chopped
    3 celery ribs, chopped
    3 garlic cloves, minced
    1 small zucchini, cubed
    1 handful fresh kale, chopped
    1/2 cup barley (dry)
    1 (14 1/2 ounce) can chickpeas or white kidney beans, drained
    1 tablespoon fresh parsley, minced
    1/2 teaspoon dried thyme
    1 teaspoon dried oregano
    1 (28 ounce) can crushed Italian tomatoes
    1/2 teaspoon salt
    1/4 teaspoon pepper
    grated cheese (garnish - optional)

Directions

Chop all the veg into nice small bite sized pieces. Add everything to the crock pot and stir well. Leave to cook on low for about 8 hours. Haven't tried it on high, but surely you could shorten the time by cooking on high. Adjust the seasoning to your taste (salt will very much depend on your broth - the original recipe calls for a full tsp of salt).
