Ingredients

    2 cups uncooked rotini pasta
    2 tbsp olive oil
    3 cups sliced fresh mushrooms
    6 medium green onions, cut into 1/2 inch pieces
    1 medium red bell pepper, coarsely copped
    1 clove garlic, finely chopped
    90 grams of prosciutto ham, cut into thin strips
    1 tbsp chopped fresh or 1/4tsp dried basil leaves
    2 tsp chopped fresh or 1/4 tsp dried oregano leaves
    1/4 tsp salt
    1/4 cup shredded Asiago cheese

Directions

1. Cook and drain pasta as directed on package
2. Meanwhile, in 10-inch nonstick skillet, heat 1 tbsp. of the oil over medium-high heat. Cook mushrooms, onions, bell pepper and garlic 2-3min, stirring occasionally, until vegetables are tender.
3. Stir in prosciutto, basil, oregano, and salt. Stir in pasta and remaining 1 tbsp oil; toss. Sprinkle each serving with cheese.

    This was a very easy recipe to make and it tasted so good. My husband even said I should make it again...I served mine over bow ties instead of rotini and added extra garlic because we LOVE garlic!! - 1/14/10
