Introduction

A meal I am creating for my 3 year old grandson who was just been diagnosed with Juvinile Diabetes. Hard to get enough good carbs in such a little guy. Number of Servings: 4

Ingredients

    2 Cups Whole Wheat Pasta cooked
    8 ozs 99% fat free Turkey Breast
    1 can Del Monte Diced Tomatoes unsalted
    1 medium bunch brocolli pureed in tomatoes
    1 cup Cheddar Cheese
    4 TBSPs Carrots grated
    1 TBSP Basil
    1 TBSP Oregan
    1 tsp Garlic minced

Directions

Preheat oven to 350.
Cook pasta according to directions, when done drain and set aside.
Saute turkey in olive oil until cooked well, add carrots and garlic and saute until carrots are wilted.
Add tomatoe/brocolli puree, herbs and simmer for 15 to 20 mins.
Combine pasta and meat sauce with 3/4 cups cheese and place in a cassole dish.
Top with remaining cheese.
Bake in a 350 degree oven for 30 mins or until bubbling and cheese is golden brown.
