Ingredients

    1/2 large red bell pepper
    2 large green bell pepper
    1/2 large yellow or orange bell pepper
    I medium onion
    7 0z Hillshire farm TURKEY polish sausage (half a 14 oz package)
    3 TBSP olive oil

Directions

Prep time and cooking time are my estimates

You may reduce the olive to 1 1/2 Tbsp to save fat calories

1. Wash all vegetables and drain well
2. Peel skin from onion
3. Slice the turkey sausage in half lenth wise.
4. Cut each long half into thin slices. Each slice of turkey sausage should be a half circle. You want small pieces.
cut all washed and drained vegetables into long strips and saute the sausage, peppers, and onions in the 3 tbsp of olive oil. Cook until the vegetables are done to your desired tenderness.

Serve with Orzo pasta or brown/white rice
