Introduction

I had this at a potluck made by this little old lady named Melba. I asked for her recipe and here it is for the world to enjoy! I had this at a potluck made by this little old lady named Melba. I asked for her recipe and here it is for the world to enjoy!
Number of Servings: 4

Ingredients

    15.5 oz can of Salmon
    2 cups rice, cooked
    1 cup onion, chopped
    1 tsp of margarine
    1 can of cream of mushroom soup (light version)
    1 small bag of baked potato chips, crushed

Directions

Preheat oven to 350F.

Drain salmon, but save the liquid. Break up salmon into a small pieces into a bowl; add cooked rice.

Cook onion in melted butter until tender, not brown, in a medium size pot. Add salmon and rice, salmon liquid, soup and mix until smooth.

In greased casserole dish place half of potato chips a long bottom evenly. Put salmon, rice, soup mixture on top of chips in casserole dish and top with the rest of the chips.

Bake uncovered for 30 minutes.

Makes 4 servings.
