Introduction
This salad is one I created when I started a low-carb diet a year ago. You can cut down the carbs by lowering the amound of onions and peppers you use, or by eliminating the sour cream and amping up the salsa.Anyway, I always crave fajitas, and this salad gives all the flavor without the calories or carbs you get in a tortilla.
Now that I'm not really counting carbs anymore I still love this salad because the flavor is so good, and it really doesn't take too much time to make. It's easy to double or triple when I have my husband or kids around, too, because it all cooks in the same skillet... and you can customize the amounts of cheese, salsa, etc., to each person's taste right in their bowl.

Ingredients

1 medium chicken breast
.5 cup green bell pepper
.5 cup white onion
1 tsp fajita seasoning mix
.3 cup cheddar cheese
2 tbsp sour cream
drizzle olive oil
.25 cup salsa
2-3 cups romaine lettuce
Directions
Makes one large salad.
Cut up chicken breast into small chunks, and cut bell pepper and onion into small pieces.
Drizzle a hot skillet with olive oil (you don't need much, because the chicken and veggies will create some liquid, too). As the chicken and veggies cook, sprinkle with fajita seasoning. Btw, if you like your veggies crunchier, add the chicken and let it cook through before you add your onions and peppers.
Shred lettuce and place in a bowl. sprinkle with cheese.
Mix salsa and sour cream. You can use this instead of dressing, so make sure you use a good quality salsa. The more flavor your salsa has, the more flavor your salad will have.
When the chicken and veggies are cooked to your liking put them right from the pan onto your lettuce and cheese, and then put your salsa/sour cream mixture on the top.
I actually like to mix it all together because then the lettuce warms up just a little and the cheese gets kind of melty.
