Introduction

Ingredients

    1 cup zucchini - shredded
    1/8 cup Jiffy All Purpose baking mix
    1 large egg
    1/2 tsp garlic
    1/2 tsp onion salt
    1 tsp chopped chives
    1 tsp pepper

Directions

Blot all excess water out of the zucchini.

Mix together all ingredients.

Lightly spray griddle. Drop batter by spoonful. Flip once after a few minutes.

Serve with salsa or light sour cream if desired.
