Introduction

There are a few carbs in this recipie trying to figure out how to sweeten up the cranberries without using the sugar.....will work on this one. But the sauce is great for chicken or fish. Really good with a wilted spinich salad, add some dried cranberries and blue cheese...Mmmmmm There are a few carbs in this recipie trying to figure out how to sweeten up the cranberries without using the sugar.....will work on this one. Ingredients

    8 Chicken breast pieces (boneless skinless)
    1 cups cranberries
    1 cups pineapple (with juice)
    1/4 cup sugar
    2.5T lemon juice
    1 T Rosemary
    1/4 t salt
    water as needed

Directions

Put cranberries, pinapple, lemon juice,rosemary salt and sugar into blender or food processer. Run until smooth, may need to use some water to get to completely chop. (dont worry just adds some cook time) Pour contents of blender into a medium sauce pan over high heat and bring to boil. Bring down to simmer, stirring ocasionally reduce sauce to about half, should still be tart but not bitter. Sprinkle Salt,pepper, rosemary and lemon on chicken to taste, and grill (I use the Forman) till done. Serving size is one piece of chicken with about 1-2 tablespoons of sauce over chicken. Great with a wilted spinich salad!
