1 c chopped red bell pepper
    1 c sliced zucchini squash
1 TBsp dried Italian herbs (more or less to taste)
    2 minced/diced garlic cloves (I LOVE garlic!)
    1 diced medium onion
    10 sliced med fresh mushrooms
1 TBsp extra virin olive oil

1. sautee onion, diced garlic cloves and red pepper in olive oil until tender
2. add canned diced tomatoes and sauce start the sauce to simmer.
3. add dried Italian herbs ( use fresh oregano and basil if you can afford it and add to taste)
4. mushroom slices simmer till done
5.add zucchini and cook til JUST tender.
How's it taste? change and experiment as needed. This is just my idea as a base chunky style veggie spagetti sauce.

For protein add a cup of small cubes of tofu veggie dish
add turkey Italian sausage for flavor 1/2 serving per person
