Ingredients

1 6oz can of tomato paste (unsalted)
1/2 c dry red wine
1/2 c chicken broth
1 clove garlic, minced
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1 lb ground turkey breast
1 c oatmeal
1/4 c liquid egg substitute
1/2 cup shredded zucchini
Directions
Preheat oven to 350
Combine tomato paste, red wine, chicken broth, garlic, basil, oregano, and salt in small saucepan. Bring to boil and simmer on low, uncovered for 15 minutes.
Combine turkey, oatmeal, egg sub and zucchini and 1/2 c of tomato mixture in a large bowl.
Shape into meatloaf and place in 8x4 loaf pan
Bake for 45 minutes
Discard any drippings
Pour 1/2 cup of remaining tomato mixture over top of loaf
Bake for 15 minutes longer
Cool 10 min before slicing
Serve remaining tomato sauce on the side.
