I love spinach and bacon together, Oscar Mayer's center cut bacon is so low calorie I can put 2 pieces and still have enough flavor and the veggies make the omelet so filling. Ingredients

    baby spinach
    2 slices Oscar Mayer Center Cut Bacon diced
    1/8 cup Reduced Fat Feta Cheese
    1/8 cup sliced mushrooms
    1/3 diced Roma Tomato
    1/4 cup onion
    1 large egg
    1 large egg white
    1 Tbs water

Directions

Saute bacon, then add onion and mushrooms, then add spinach. Mix egg, egg white and water, spray pan with spray oil, drop in egg mix, add saute'd veggies, cheese and tomato top skillet with lid til egg cooks completely, then fold over and enjoy
