This a quick on the go option and makes over a weeks worth of breakast. Ingredients

1 Large Egg
11 Egg Whites
4 Morning Star Breakfast Sausage Patties Diced
8 oz of Chopped Onions, Green Bell Pepper and Tomatoes Medley (may be adjusted depending on your taste)
Salt and Pepper maybe added to taste
1/2 Cup Aluminim baking cups
Directions
makes appox 8- 1/2 cup servings
Heat oven to 400 degrees
Add egg and egg whites into a large mixing bowl and whisk
Then add all other ingredients and mix
Spray baking cups with non stick cooking spray
Spoon egg mix into baking cups about 3/4 full (will expand while baking)
Place cups on baking sheet
Place filled cups in oven and bake 15-20 minutes
The eggs filled the cup right out of the oven and contracted once they cooled.
I left them in the cups and placed them in ziplock bags in the freezer so their ready to go. May be heated in mircrowave (w/o cup) or heated in a toaster oven.
Can be served with toast, cheese or eaten alone.
