Low fat, packed with flavour and oh so flexible. Feta is optional (save around 50 calories per serving without it) but you truly only need just a small piece of this tasty cheese to go a long long way.
You could serve this over orzo, brown rice, in pita... or just on its own.

Ingredients

    1 tbsp olive oil
    400 g turkey breast, cut into small pieces
    5 - 6 vine tomatoes, chopped into 1cm pieces
    2 bell peppers, chopped into 1cm pieces
    1 courgette aka zucchini, chopped into 1cm pieces
    6 cloves garlic, minced
    1 tbsp oregano
    juice of one lemon
    400g frozen spinach
    6 cubic inches feta cheese, optional

Directions

Brown the turkey in the olive oil over medium-high heat
Chuck in the tomatoes, peppers, zucchini, garlic, oregano and lemon juice and let it simmer for about 15 minutes (if you're making orzo this is a great time to get that going)
Add the frozen spinach for the last 5-7 minutes of cooking time and mix it in when it's thawed out. Add plenty of cracked black pepper.
Crumble 1 cubic inch of feta onto each serving if desired. Keep in mind that this recipe may require salt to taste right if you do not use the cheese!
