Ingredients

    1 can black beans, rinsed;
    1 can whole kernel yellow or white corn;
    1 red pepper, seeded and chopped;
    1 fresh lemon (for juice);
    dash of salt;
    dash of black pepper;
    medium red onion, chopped.

Directions

Combine the beans and corn in a colindar and rinse well. Chop onion and red pepper into small pieces. Combine all in large container and add salt and pepper to taste. Squeeze the juice from 1/2 of a lemon and stir. Refrigerate for 15 minutes.

    I have a similar recipe that I use all time with these exceptions/additions.
    Use lime juice instead of lemon.
    Add 1/4 cup chopped cilantro
    Add 1 Tbsp hot sauce.
    Also, I let mine sit for at least 2 hours to let the flavors blend. Good as salsa, or as a side for chicken and fish.
