Introduction

This is a simple supper that is not only delicious, but also good for you! Miso broth poaches the chicken and steams the broccoli that rests on top of it, preventing it from being overcooked. Ingredients

    2 cups chicken broth
    1/4 cup white miso paste
    1 clove garlic, sliced
    6 chicken breast halves, skin and bones removed
    1 pound broccoli, stalks trimmed and peeled and cut into florets

Directions

Serves 6

Pout the broth into the insert of a 5-7 quart slow cooker. Add the miso, garlic, and ginger and stire to combine.

place the chikcen in the broth and place the broccoli on top of the chicken. Cover and cook on high for 1-1/2 - 2 hours, until the chicken is cooked through and the broccoli is tender.

remove the chicken broth and arrange it on a serving platter, surrounded by the broccoli. Strain the broth through a fine-mesh sieve and serve in bowls. The chicken can also be served in bowls.

You can also put dinner on the top of noodles or rice.

    It was kind of bland, which surprised me because of how much Miso is in it. If I make it again I will add salt and pepper, more ginger and maybe some mustard powder. - 3/24/10
