Introduction
These are adapted from a recipe I use often - they are lower in fat and calories than traditional crepes. You can make them and freeze the leftovers (between sheets of waxed paper), and then microwave them for quick yumminess! Ingredients

4 egg whites, at room temperature
1 cup fat-free (skim) milk
1/2 teaspoon vanilla extract
1 tablespoon powdered (icing) sugar
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
Directions
Makes 14 crepes to serve 7 (2 each!)
In a blender, whiz around the 4 egg whites until frothy. Add in milk (can use soy), vanilla and powdered sugar. Whiz around again.
Add in flour, baking powder and salt. You got it: whiz around, but just for a bit - just till everything's mixed, otherwise your crepes will be tough and rubbery.
*Refrigerate batter for 30 minutes.*
Spray a non-stick pan with cooking spray, or wipe with a small amount of oil. Pour in a little of the batter; gently tilt the pan all around to distribute the batter. When browned on bottom, flip over to brown the other side.
*serve with some fresh blueberries and yogurt - yummm!
