Ingredients

2/12 cups self-rising flour
1/2 - 1/4 cup sugar
1 TB unsalted butter
1 Cup cooked mashed pumpkin
1 egg, slightly beaten
1 pinch salt
1 tsp ground cinnamon
2 oz fat-free milk, more if needed
canola cooking spray
Directions
Preheat oven to 400 degrees F
Cream butter and sugar.
In large bowl, add flour and salt. Add egg, pumpkin, milk, and creamed butter and sugar to dry mixture. Mix til just combinded. More milk may need to be added depending on texture
Lightly spray cookie sheet with canola spray. Roll out dough onto floured surface to about 1/2 inch thickness. Cut into scones.
Bake 10-15 minutes or until tops are light golden brown. Scones should be soft and not hard.
Serve with fig jam.
