Introduction

Number of Servings: 4

Ingredients

    1 lb chicken breast
    1 large onion chopped
    1/2 cup low carb Ketchup
    3 Tablespoons Brown Sugar
    1 Can Diet Pepsi
    Bread/Rolls (not included in Calorie Count)

Directions

Combine all ingredients in a slow cooker or crock-pot over low heat.
Stir and let cook for 6 hours.
Remove chicken from slow cooker and shred.
Return shredded chicken to slow cooker and cook for 1 hour
Serve on buns or rolls.

Makes 4 Huge Servings or 6 medium

    The nutrional count is off on this recipe because it was calculated with one chicken breast unit from a 1lb ready to cook chicken. If you make this make sure to re-calculate it yourself for the amount of chicken you use. - 3/5/09

    I came close to the calorie count. I used 1 lb. chicken (4 chicken breasts) and got 116 calories for 6 (2/3 cup) servings which was plenty on a long hoagie bun (which is NOT in the calories count. I agree with the others and would like to try BBQ sauce next time. - 5/7/09

    one way to make the sauce thicker is to pour the sauce and onions into a blender and process - the onions will thicken the sause without adding extra calories! - 3/5/09

    Very tasty!! My only issue was with the nutritional info, when I recalculated it, it came out to 187 calories....100 more calories than what is listed for this recipe. I didn't even put the brown sugar in. So, suggest you recalculate this one. Other than that, it was very good!! Thanks :) - 1/20/09
