Ingredients

1 tbsp vegetable oil
1 lrg onion, chopped
3 cloves garlic, minced
2 cups water
1 cup lentils
1 tsp turmeric
1 tsp cumin
1 tsp ginger
1 (14.5oz) can diced tomatoes
.25 cup fresh cilantro
.25 cup jalapeno, seeded and chopped
Directions
1. Heat oil in skillet. Add onion and garlic, sautee until golden (about 10 minutes).
2. Combine 2 cups water, lentils and spices in saucepan. Bring to a boil. Reduce heat, cover and simmer until lentils are tender (approx. 15 min.). Stir often.
3. Mix in onion/garlic, simmer for 5 minutes to blend flavors.
4. Stir in tomatoes, cilantro and jalapeno. Simmer for 5 minutes and stir.
Tip: Cooking the lentils takes the longest -- set these up first, let them come to a boil while you're browning the onion and garlic.
Serving suggestion: Stir in a dollop of Greek yogurt.
Makes 4 servings (approx. 1.5 cups per serving)
