Ingredients

    1 med head of cauliflower, trimmed and cut into florets
    Cooking spray
    ½ t salt
    2 t butter
    1/3 c panko
    ½ c shredded Gruyere (2 oz)
    2 T finely chopped chives
    ½ c finely chopped onion
    1 cl garlic, minced
    3 T flour
    2 c soymilk
    3 T chopped fresh flat leaf parsley
    ¼ t pepper

Directions

Preheat oven to 400. Place cauliflower in 2 qt. broiler safe baking dish lightly coated with cooking spray. Coat cauliflower with cooking spray, sprinkle with ¼ t salt, toss. Bake at 400 for 30 min until almost tender. Cool 5 min. Preheat broiler. Melt butter in saucepan over med heat. Remove from heat and stir in panko. Stir in ¼ c cheese and chives. Heat a med saucepan over med-high heat. Coat pan with cooking spray. Add onion to pan and sauté 4 min or until almost tender, stirring frequently. Add garlic and sauté 1 min, stirring constantly. Add flour and cook 1 min, stirring constantly. Gradually add soymilk stirring with whisk. Bring to boil. Cook 3 min until thick, stirring constantly. Remove from heat and stir in remaining ¼ c cheese, remaining ¼ t salt, parsley and pepper. Pour milk mixture over cauliflower, toss. Top evenly with cheese mixture. Broil 3 min until golden brown.
