Ingredients

    1/2 Cup Feta Cheese
    2 TBSP. Fresh Basil
    1 Cup Fresh Spinach - Chopped
    2 Cups Fresh Broccoli - Chopped
    2 Cups Roma Tomatoes - diced
    1 TBSP Extra Virgin Olive Oil

    5 Boneless Skinless Chicken Breast

    3 Ounces Low Fat Mozzarella Cheese

Directions

Mix together olive oil, crushed garlic, chopped broccoli, spinach, basil, tomatoes and feta cheese. Pound chicken breasts very thin. Place a good amount of mix on top, center of chicken breast...sprinkle with salt & pepper. Roll chicken breast into log formation, hold together with toothpick. Sprinkle tops of chicken "logs" with mozzarella cheese and bake at 375 for 35 minutes or until fully cooked. Enjoy!! =)
