Very versatile dish that can be changed according to your taste and ingredients available. I used left over chicken and brown rice, but I'm looking forward to trying shrimp and other fresh veggies. Ingredients

    1 tbsp olive oil
    2 cloves garlic (minced)
    minced fresh ginger (about 1 tsp)
    minced onion (1-2 tbsp)
    mixed frozen veggies
    shredded chicken breast
    1 cup cooked brown rice
    1 egg scrambled
    Ken's Lite Asian Sesame Ginger and Soy Dressing

Directions

Makes approximately 2 1-cup servings.

Saute ginger, onion, and garlic in olive oil. Add chicken and vegetables; stir fry until tender. Scramble egg and cook in same pan; mixing egg into rice mixture. Add dressing and heat through.
