Ingredients

1 egg white
1/4 cup dry white wine
1/3 cup fresh breadcrumbs from day old bread
1/4 cup thinly sliced green onions
1/4 tsp salt
1/8 tsp pepper
1 lb lean ground turkey
4 oz fresh mushrooms, finely chopped
6 hamburger buns, split (wheat)
Directions
Advanced Prep: Make soft breadcrumbs from 2 or 3 sliceds of day-old bread. Chop green onions and mushrooms.
Preparation: Beat the egg white and wine in a mixing bowl until blended. Stir in the breadcrumbs, green onions, salt, and pepper. Gently stir in the turkey and mushrooms. Shape mixture into 6 patties, about 1/2-inch thick each. Wrap individually in wax paper or clear plastic wrap. Place the patties into a large freezer bag; place bag of patties and bag of hamburger buns together into a second freezer bag. Label and freeze together.
To Serve: Thaw the patties and buns in the refrigerator at least 24 hours before serving. Preheat broiler. To serve, place the patties on a broiler pan, and broil about 6 inches from the heat source, turning once, until patties are lightly browned on both sides and the juices run clear when a knife is inserted in center, 8 to 10 minutes. Serve hot in the buns.
