Ingredients

    1 - 28 oz can diced tomatoes
    1 - 10 oz can RoTel Original Diced Tomatoes with Green Chilies (optional)
    1 C dried brown lentils
    1 medium onion, diced
    3 cloves garlic, pressed or minced
    1 rib celery
    2 carrots
    2 potatoes (about 12 oz)
    4 C low sodium vegetable broth
    3 bay leaves
    3 Tbsp curry powder
    1 tsp ground cumin
    1 tsp coriander

Directions

Place ingredients in a slow cooker. Stir well. Cook on low for 8 - 10 hours.

NOTE:
This dish will be very spicy if you use the RoTel tomatoes!
