Introduction

Ingredients

    1 cup chopped onions
    2 cloves garlic, crushed
    1 Tbsp. extra virgin olive oil
    4 cups chopped kale
    2 cups undrained chunk pineapple (one 20 oz. can)
    1/4 cup creamy peanut butter
    1 tsp. dried cilantro


Directions

Saute onions and garlic in olive oil until soft (about 5 to 7 minutes). Add the pineapple with its juices and bring to a simmer. Stir in the kale, cover and simmer for about 5 minutes, stirring a couple of times, until just tender. Add in the peanut butter and cilantro and simmer an additional 5 minutes.

NOTES: The original recipe called for double the amount of peanut butter, 1 Tbsp. of Tabasco or other hot sauce, and crushed skinless peanuts and scallions to top the recipe. It also suggests adding salt to taste (I didn't miss the salt). I served each serving over a 1/2 cup of whole wheat couscous.

    The original recipe was one of our family favorites. We really like these changes and don't miss the salt at all! We serve it over a half cup of Basmati rice. - 5/24/11
