Ingredients

    Crust:
    Whole Wheat Flour, salt, yeast, warm water, 1 TBSP Olive Oil an the Honey will make the crust.

    Filling:
    Tomato Paste, Veggies and Cheeses

Directions


Crust:
Whole Wheat Flour, salt, yeast, warm water, 1 TBSP Olive Oil an the Honey will make the crust.

Pour flour into a large mixing bowl. Add yeast and salt. Mix well. Add water, oil and honey;
mix well. Cover with a moist cloth and place in a warm spot for 10 minutes to rise.
Sprinkle dough lightly with flour. Punch down and press into a greased 14 inch pizza pan or a 10 inch pan, or baking stone, and build up crust slightly for a thicker crust.

Filling:
Chop all veggies up. Heat skillet on medium high and add Olive Oil, Leeks and Green Onions. Cook 2 minutes until translucent. Add tomatoes and cook 2 minutes (add nostick cooking spray or Tbsp water if pan gets too dry while cooking) Add Kale and spinach and cook additional minute or so til wilts.

Spread tomatoe paste on pizza crust. Add veegies from skillet. Shred and sprinkle the cheeses over the veggies evenly. Bake at 425 degrees for 15 to 20 minutes
or until crust is golden brown and cheese is melted.

Feel free to use ANY cheese that you like. These are the cheeses that I had. Very tasty for a meatless pizza.

Makes 4 servings of two 6 inch by 4 inch wide at the crust pie pieces.
