Ingredients

    5 potatoes
    1 cup diced ham
    1 can navy beans
    2 cans 99% fat free chicken broth
    2 cups skim milk
    1 cup celery chopped
    1/2 cup white onion chopped
    3 tsp season salt
    1 1/2 tsp black pepper
    1 tbsp parsley flakes

Directions

Wash 5 med sized potatoes, then poke with fork. Microwave them for about 13-15 minutes, check to see if they are tender (like a baked potato). When done leave sit for about 10 minutes then remove most of the peel, careful they will still be hot. Place in bowl and use potato masher to mash up a bit, but leave it chunky.
While potatoes are in the microwave cooking chop onion, celery and ham. Place all ingredients except potatoes in large pan and bring to a boil. Reduce heat and simmer. Add Potatoes after they have been mashed.
Simmer, stiring occasionally for about 45 minutes.
Makes 8 servings
