Ingredients

1/4 cup olive oil, divided
1 onion, chopped
4 cups low sodium vegetable broth
1 pound broccoli crowns, chopped
2 cups fresh spinach
3 tablespoons all-purpose flour
2 tsp salt
2 tsp pepper
1/4 tsp ground nutmeg
Directions
Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add the onion and garlic and cook, stirring occassionally, for 8 minutes or until golden brown.
Add the broth and broccoli. Cover, reduce the heat to low, and simmer for 15 min. or until the broccoli is tender. Turn off the heat, add the spinach, and stir until the spinach is wilted. Transfer the mixture to a blender and puree until smooth.
Meanwhile, heat the remaining 3 tbsp oil in a small pan over medium heat. Add the flour and stir until smooth. Cook, stirring occasionally, for 2 to 3 minutes or until light brown. Set aside.
Heat the soup in a pot over medium-high heat just until it begins to boil. Reduce the heat to low to maintain a simmer. Add the reserved flour mixture and stir until the soup thickens.
Add the salt, nutmeg, and pepper to taste.
