Introduction

This is my version of a popular Italian soup. I have eliminated many calories and alot of the fat, but beware of the salt content. For me, the taste is worth it. Number of Servings: 4

Ingredients

    5.5 cups of chicken broth
    1/2 cup of fatfree half-and-half
    2 medium russet potatoes, diced (peeling is optional)
    4 cups of kale, chopped
    4 links of Jenny-O Spicy Italian Sausage (mild is also okay)
    1/2 tsp salt (adjust to your taste)

Directions

Combine the broth and half-and-half in a large saucepan over medium heat. Add the diced potatoes and kale. Cover pan and let simmer. Remove sausage from casings and cook in a skillet until browned. Add to soup. Continue cooking soup (covered) until the vegetables are soft (about 30 minutes).
