Ingredients

3/4 cup packed brown sugar
1/3 cup Splenda brand sweetener
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 tsp vanilla
2 eggs
1 1/2 cups all purpose flour
1/2 cup natural bran
2 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1/2 tsp salt
4 cups peeled, shredded sweet potato
1/3 cup raisins
1/2 cup pecans, chopped
Directions
Preheat oven to 350 degrees. Line muffin tins with paper liners.
Whisk together brown sugar, Spenda, oil, applesauce, vanilla and eggs.
Mix together flour, bran, baking powder, spices, salt and sweet potato in a large bowl. Add wet mixture and stir until just moistened. Add raisins and pecans.
Spoon the batter into the tins. Bake 30 - 35 minutes or until a toothpick inserted into the center comes out clean.
The nutritional information is based on 20 smaller muffins, but it can make 12 nicely capped larger muffins if the "muffin top" is your favourite part!
