Introduction

Ingredients

    1 large can petite diced tomatoes
    1 can 99% fat free chicken broth
    3 can black beans, drained & rinsed
    1 2 lb hormel always tender pork loin roast, trimmed of fat and cut into 1/2" cubes
    garlic & onions to taste
    chopped red peppers to taste
    1 pinch kosher salt
    cumin

    Serve over jasmine rice mixed with fresh cilantro afer cooking.

Directions

trim fat from roast and cut into 1/2" cubes. Brown in bottem of soup pot with a little cooking spray to prevent sticking. When meat is browned, add black beans, tomatoes, red pepper, onion, garlic, kosher salt, cumin, and chicken broth.
Allow to cook on high for about 15 min, stirring often. Turn heat down to low and allow to simmer for another 15 min.
In a separate pot have your rice boiling. When rice is done, drain and stir on fresh cut cilantro.
To serve, spoon rice to bottom of bowl, ladle stew over the top.
