Introduction
I was inspired by Chipotle, as I LOVE their burrito bowls. This is my version of their veggitarian burrito bowl, with portion control :) We serve it as a "build your own bowl" and my family loves it. Ingredients

For the Rice:
2 cups Long grain brown rice
1/4 cup cilantro
Juice of 2 1/2 Limes
For the Corn salsa:
1 Can Corn, No Salt Added
1 cup of your favorite store brand salsa
1/4 cup cilantro
For the Guacamole:
2 fresh avacados, seeds and skin removed
Juice of 1 1/2 lemons
Juice of 1/2 lime
Garlic Powder 1.5 Tbsp (alternately use 1 tablespoon fresh garlic, minced)
Chili Powder 1 Tbsp
Additional toppings:
1 Can Black Beans, rinsed and drained
1 cup shredded iceburg lettuce
Directions
First, measure the water and rice, and get that cooking, as it takes the longest, following the directions on the bag.
Next, chop the cilantro. Reserve 1/4 cup to mix with rice when it is ready. Combine the remaining 1/4 cup with the salsa. Drain the Can of Corn and add this to the salsa. Stir together. Add Garlic powder to taste.
Next, you want to make the guacamole. Cut the avacados in half, removing the seed, and scoop into a small mixing bowl. Squeeze the lemon juice and lime juice into the bowl. Add the garlic powder and chili powder. Mash together with a spoon to create desired consistency; if too thick, add more lemon juice.
Next, chop the iceburg lettuce.
Next, drain and rinse the black beans, placing them into a microwave safe bowl. Microwave for 1 min 30 sec.
By this time, the rice should be just about done. Remove rice from heat and fluff with fork. Stir in the reserved cilantro along with the juice of 2 1/2 limes.
You are ready to serve! We use a 1/2 cup measure to layer the rice, and then the beans, and then add 2 Tbsp corn salsa, 1 tbsp guacamole, and 1/4 cup shredded lettuce.
Makes 6 healthy and satisfying servings.
PS. Since I am the only one in my family whose goal is weight loss, I do not add anything else, and I find this to be delicious and satisfying. My fiancee is trying to gain to reach a healty weight, and he likes to add shredded cheddar cheese and sour cream to his bowl, so this is an option for the non calorie conscious among us, but this is NOT included in the nutritional breakdown for the meal.
