Ingredients

7 pcs. chicken thigh, cut two slits on each thigh
coating:
a handful of cornflakes, crushed
a handful of fresh curry leaves, shredded
half a handful of spring onion, finely chopped
2 handfuls of grated cheddar cheese
1 tbsp. onion powder
1 tsp. garlic powder
1 tsp. ginger powder
5 tbsp. McCormick curry powder
a dash of salt
1/4 tsp. pepper
1 tbsp. olive oil
Directions
pre-heat oven to 180C.
mix all coating ingredients. rub and coat chicken thigh with the cheese curry mixture.
arrange the coated chicken thigh in a baking tray.
bake for 30. when the coating turns brown, then cover the top of chicken with aluminium foil to prevent cheese from charring. continue to bake for another 15 minutes.
arrange the baked chicken thigh on a plate. pour the drippings over the chicken before serving.
serve with warm rice.
