Ingredients

    I cup diced roast chicken breast, skin removed
    1 cup diced celery
    1 cup diced apple
    1 Tbsp Spectrum Lite Canola Mayo
    2 Tbsp Nonfat plain yogurt
    1 bunch fresh cilantro
    lemon juice and fresh ground black pepper to taste
    1/4 tsp curry powder

    Rice Cakes

Directions

Dice chicken , celery, apple, combine in bowl with curry powder, mayo and yogurt. Chop fresh cilantro and fold into chicken mixture. Add lemon juice and black pepper to taste.

Spoon salad onto Rice Cakes.

Makes 2 1 1/2 cup servings
