If you don't want it spicy, use regular curry powder! If you don't want it spicy, use regular curry powder!
Number of Servings: 8


    2 tbsp HOT curry powder
    1 tsp ground ginger
    1 tbsp coconut oil
    1 med. red onion
    5 cloves garlic
    1.8 pounds boneless, skinless chicken breasts
    1.5 cups chopped broccoli (or cauliflower)
    12 oz. coconut milk made from 3/4 cup maggi coconut powder mixed with 1-1/2 cups water


Heat Skillet on medium, add curry powder and ginger - heat for 1 minute until fragrant. Add oil, chopped onion and garlic, cook until tender. Add diced chicken, cover and cook for 10 minutes.

Add broccoli, coconut milk. Reduce heat, simmer 30 minutes.

Serve over 1/2 cup basmati rice (not included in calorie count)

Makes 8 appx. 1/2 cup servings.
