Ingredients

For Salad:
1 can black beans
1 can chili beans
1 can white beans
2 tbsp minced garlic
½ onion chopped
¼ cup celery chopped
1 tbsp dried oregano or Italian seasoning
3 tbsp Italian dressing
For Dressing:
1 tbsp vinegar (any kind)
2 tbsp olive oil
½ tbsp Dijon mustard
½ teaspoon sugar
dash of salt and pepper
Directions
Makes about 8 1/2 cup servings.
Rinse and drain all beans! Then mix, how easy was that?! Best to let it marinate in the fridge for a while, but you can always eat it right away. You could use any kinds of beans (and as many kinds as you want), I’d probably sub the white beans for chickpeas, but I like chickpeas a lot. Or if you’re feeling creative, make your own dressing; recipe suggestion will follow!
