Ingredients

    4 ripe roma tomatoes, chopped
    1/2 c fresh chopped basil
    1 jemon, juiced
    1 tbsp balsamic vinegar
    1 15 oz can black beans, rinsed and drained
    1/2 of 1 15 oz can chicpeas (garbanzo beans), rinsed and drained
    1/2 of 1 15 oz can corn, rinsed and drained
    1 avocado, peeled and cut in chunks
    1/2 tsp chili powder
    pinch cumin

    fresh spinach (2 cups per serving)

    can add sea salt and black pepper to taste

    *optional: 1 small purple onion, finely chopped

Directions

Combine all ingredients (sans spinach) together in large bowl.

Serve chilled over 2 cups fresh spinach per serving.
