Healthy, tasty and quick, this recipe has become a standby for us, both for entertaining and for everyday eating. Any white fish will work, but orange roughy just seems right for an orange juice based sauce! Ingredients

    2 - aprx 6 ounce fillets of orange Roughy or other white fish
    Juice of 2 oranges or 1 cup orange juice (approximate)
    aprx 1 tbsp flour
    2 tsp nutmeg
    zest of 1 orange
    1 tbsp olive oil (or nonstick cooking spray)

Directions

Make sure fish is fully thawed. Dry fish by pressing between paper towels. on a plate or shallow bowl, mix together flour and 1 tsp of nutmeg, and spread thin. Coat fish fillets in the flour mixture on both sides.

In a bowl or cup, mix together orange juice, remaining nutmeg, and orange zest.

Heat oil in a fry pan on medium or medium high. Place in filets, and cook aprx 5 mins on each side (or until cooked thru). In last minute of cooking, pour orange juice mixture over fish and let it come to a boil. Remove fish, and let orange juice boil until desired sauce consistency (usually it doesn't need more than a minute) Pour sauce over fish and serve immediately.

Makes 2 servings, and increases easily for more people. orange juice amount is approximate! I almost never measure it.

    I haven't tried this recipe. We do enjoy orange roughy enjoy the creole spice and butter flavors with it. I may try the next time I buy orange roughy. - 4/7/19
