Introduction
The original recipe is from the Allrecipes website, submitted by Tiffany Rogers. I substituted 3/4 C. of pureed white beans for the shortening called for in the original recipe: this reduces calories & fat, and adds fiber plus extra nutrition from the beans. Ingredients

3/4 C. Pureed White Beans
1 C. Packed Brown Sugar
1 Egg
1/4 C. Blackstrap Molasses
1 C. Whole Wheat Flour
1 C. Unbleached White Flour
1/4 teas. Salt
2 teas. Baking Soda
1 teas. Ground Cinnamon
1 teas. Ground Cloves
1 teas. Ground Ginger
Directions
1. Cream together the pureed beans and brown sugar. Add egg and molasses, and beat well. Add dry ingredients, and mix well.
2. Chill dough at least 1 hour or overnight.
3. Preheat oven to 375 degrees F. (190 degrees C.)
4. Roll dough into 1-inch balls, dip tops into sugar. Place balls 2 inches apart on cookie sheet covered with Release aluminum foil. Bake for 10 minutes. Cool slightly before removing from pan. Let cool an a cool countertop rather than a rack for best results.
