Introduction

This delicious soup is sure to please the entire family--plus it is a great way to sneak in tons of extra veggies! This delicious soup is sure to please the entire family--plus it is a great way to sneak in tons of extra veggies!

Ingredients

    1 16 oz. can white beans, drained and rised
    1/2 medium cabbage, chopped
    1 medium white onion, chopped
    1 10 oz. package frozen peas
    2 medium zucchini, chopped
    3 T tomato paste
    8 cup Chicken Broth
    4 tsp Garlic, minced
    1 T dry oregano
    1T dry basil
    1 t salt
    8 oz pasta (shell or elbow) cooked al dente

Directions

Spray a soup pot with cooking spray on medium high heat. Add the onion and garlic and saute for about 5 minutes. Add all the remaining ingredients EXCEPT the zucchini and bring to a boil. Cover, reduce the heat to medium and simmer for about 20 minutes. Add the zucchini and cook until tender. Stir in the pasta to heat, then serve and enjoy!

Makes 8 1.5 Cup servings
