Introduction

I was in a bind and used real butter when I made this, but to cut back on calories and fat you should use smart balance or something similar, and you can always use less to taste. You could even use butter flavored powder! Ingredients

    1 head cauliflower, steamed until tender
    1 tsp minced garlic
    3 tbsp shredded parm
    1/4 cup half and half
    4 tbsp butter
    salt and pepper to taste

Directions

steam cauliflower with garlic in small amount of water until tender (about 10+ minutes).
drain and add parm, cream and butter and mash up.
add salt and pepper to taste.
