Number of Servings: 4

Ingredients

    2Tbs diced Ginger root
    5 gloves garlic
    5 scallions chopped (include green tops)
    1/3 c Kikkoman Less Sodium Soy Sauce
    1/3 c granulated sugar
    2/3 c water
    1lb pork tenderloin (small dice)
    4oz Raccontoa 100% Whole Wheat Capelini
    2 medium carrots grated
    1 head of red leaf lettuce

Directions

Mix first 6 ingredients together and bring to a slow boil. Turn off heat. Let cool. Once cooled add pork and refrigerate for at least 1 hour. Put pork and all mixture in pan and add carrot and cook. Add cooked pasta. (I cook mine and then cut up into small pieces) Once pork is cooked add noodles.

Serve with lettuce to make wraps.

Yields 5 cups. Each serving is 1.25 cups.
