Introduction

We eat some version of skinny "cream pie" every night for dessert. It really takes care of the sweet cravings! We eat some version of skinny "cream pie" every night for dessert. It really takes care of the sweet cravings!
Number of Servings: 4

Ingredients

    Graham Crackers, 2 full sheets (8 rectangles)
    1 small box (4 1/2 c. servings) fat free sugar free instant vanilla pudding
    2 c. skim milk
    2 T. coconut
    1-2 tsp. coconut extract
    8 T. Cool Whip Free



Directions

Mix pudding with milk according to package directions. Stir in the coconut and the extract.

While the pudding sets, break graham cracker sheets in half and place each half into a bowl. Top each cracker with 1/4 of the pudding mix (1/2 cup) and 2 T. Cool Whip Free. Sprinkle a little extra coconut on top, if desired.

Makes 4 servings.

Note: we only need 2 servings, so we mix up the pudding and then refrigerate it in 2-serving containers. When we're ready to eat it, we mix in the coconut and the extract. Try substituting bananas for the coconut and leaving out the extract for skinny "banana cream pie."

    A delicious alternative to coconut cream pie. This easily satisfies my cravings for sweets. Instead of putting the graham cracker on the bottom, I stuck two in the top. Lots of fun for the kids to dip! Thanks for the recipe. It's a keeper. - 2/6/11
